Meet Violet!

Hey y’all. Well, things are busy busy in our little household, but there’s some news of a new addition to our family.

A little girl.

Named Violet.

Dark hair and brown eyes.

Suuuuper sweet.

And, she sure loves Duchess!

Meet Violet, our foster pup! We came across this little gal on a shelter website a while back and she immediately got our attention. She is the same breed as Duchess, Australian Cattle Dog / Blue Heeler, and just adorable. So, we contacted the shelter and asked if we could foster Violet. The goal is that she’ll live with us forever, but we are waiting on Duchess to submit her final decision on that. *fingers crossed*

Other than that, I’ve been traveling for work, and working hard on building up Simply You Healthย  & Wellness. On top of that, I’m trying to keep up with my studies at Integrative Nutrition. Sheesh! I sure know how to pile it on. ๐Ÿ™‚ But, all (mostly all) good things, so the stress is welcomed. I haven’t spent much time getting creative in the kitchen due to being away and being swamped.

However, I did try a new and AMAZING Tomato Basil Cream Sauce with pasta last night. It’s vegan (cashew based) and to.die.for! In fact, we had leftover sauce that got put to good use for lunch, mixed in with brown rice, spinach, onion, and mushrooms. The sauce was even better day 2. Don’t you love it when that happens? And, mixed in with today’s goodies, it turned the dish into a risotto-esque meal. So cool (no, I have no idea how to make risotto, but thanks for asking! ๐Ÿ˜‰ ) I know I talk about this blog and refer you guys to her all of the time, but Angela over at Oh She Glows is a genius when it comes to vegan recipes. Even in this non-vegan household, many of her vegan recipes are staples. Pretty awesome if you ask me! And, rumor has it she is working on a cookbook. That one will most definitely find a place in my kitchen.

    Great photos of Violet and Duchess!!! And your porch is so nice!!! What a happy and healthy life you guys have…. I am really impressed by your cooking skills and if your kitchen were a restaurant, I would be eating there every day ๐Ÿ™‚
