Crustless Quiche on a Sunny Saturday!

Good morning!

It’s a be-a-utiful morning here in FL. Actually cool outside and not a cloud in the sky. Wahoo for awesome weather on the weekend.

Our lovely dog, Duchess, woke me up at 7 AM this morning. She must have known that the weather was nice. She was itching to get outside and play….well, that and go to the bathroom. πŸ™‚

After our short excursion, it was time for my usual – coffee and toast with almond butter. So predictable, yet so delicious.(And, yes, I should have had some fruit with this meal. I am so burned out on bananas right now. I’ll have to find something else. Maybe an apple would be good!)

While Mr. Military Man was still sleeping (Duchess likes to whine on MY side of the bed in the AM…), I decided I’d make him these new quiche alternatives he’d been eyeing. He’s on a South Beach kick right now, so there’s all sorts of low-carb (in a healthy way) going on in our house. So, this morning called for crustless quiche. It turned out to be SUPER EASY!

Crustless Quiche (adapted from South Beach cookbook)

(serves 3)

3 eggs

1/2 cup cheese

4 drops of hot sauce (we use Crystal around here)

1/2 tsp Garlic Gold nuggets

1/3 cup cooked & chopped spinach

dash of pepper

Preheat oven to 350*. Line 6 holes of a muffin pan with paper liners. Mix all ingredients together in a bowl until combined. Pour egg mixture into each muffin cup, leaving about 1/4 – 1/2 of an inch at top to allow for minimal rising. This should give you just enough “batter” to fill 6 cups. Put pan into over and cook for 25 minutes, or until egg mixture is cooked through.

I tried to figure out what a true serving is from the South Beach cookbook, but no luck. Since the recipe only has 3 eggs and 1/2 C of cheese, I’m thinking you could almost eat the whole thing and be safe. But, Mr. Military Man only had 3 cups for breakfast. I may have stolen one. Had to make sure it was tasty!

This could be a lot of fun to play with. I mean, you could add roasted garlic, chives, tomatoes, avacado….just about anything. We’ll be making this again for sure. Quick, easy, and not too messy.

Now that Mr. Military Man is up, I think we’re going to load Duchess into the car and head downtown to the Saturday Market. There is a darling little dog shop downtown that has organic dog treats. I know it sounds frivilous, but they’re actually about the same price as store-bought treats, but made with recognizable ingredients and Duchess loves them. Plus, we’re supporting local business when we buy there. Hooray for that!

Duchess is so ready to get outside. (Yes, that is a sheet for her on the couch. She’s a tad spoiled…and a big shedder!)
