Broccoli & Mushroom Rice “Bowl”

So, as you know from this afternoon’s post, I had some co-op goodies that needed to be used this evening. I had pre-made brown rice with carrots and corn, plus some fresh brocc and baby bellas. I didn’t have any oil or veggie broth on hand, so I resorted to some good ol’ H2O to help me steam up the veggies and create a savory sauce (The rice had some sesame oil added, so I probably didn’t need extra anyhow).

This one-pan meal is super simple and ready in a snap!

Broccoli & Mushroom Rice “Bowl”
(Serves 1)

1/4 cup of H2O + up to .25 to thin out your sauce later if needed
1 small crown brocc (aka broccoli)
1 handful baby bella mushrooms (aka little portabella mushrooms)
1 heaping tablespoon minced ginger
1 teaspoon asian chili sauce
1 tablespoon of Bragg’s Liquid Aminos (can sub soy sauce if you prefer)
1/3 cup cooked rice (I used a pre-made brown rice mix)

Rinse, clean, and chop brocc and baby bellas. Set aside. Heat pan over medium-high heat. Add 1/4 cup of H2O. Once water is bubbly, add brocc and bellas. Stir occasionally until appear to be cooked through (about 3-5 minutes I’d say…I forgot to watch the time here). Add minced ginger, asian chili sauce, and Bragg’s Liquid Aminos to pan and stir to combine all ingredients. At this point, if you feel that you need more liquid to create a savory sauce, add to your liking. I needed just a tad more – maybe a tablespoon. Add your cooked rice to the pan and stir until all is combined and rice is heated through. Pour your one pan meal into a bowl and enjoy! Unfortunately, I had to pour mine out on a paper plate since that’s all I’m working with these days. But, I think this would have been even tastier in a bowl (I am extremely partial to bowls…and spoons. More on that some other day.).
